Mom’s Toffee Bars

Here’s a recipe for Toffee Bars that my mom makes. It’s a pretty easy recipe with simple ingredients, so give it a try!

Ingredients:

  • 1 cup Butter
  • 1 cup packed Brown Sugar
  • 1 Egg Yolk
  • 1 teaspoon Vanilla
  • 1/4 teaspoon Salt
  • 2 cups Flour
  • 6 Hershey bars

CREAM the butter and brown sugar. ADD egg yolk and vanilla. MIX in salt and flour.

SPREAD toffee bar dough onto a sheet pan. I lightly greased mine with a little butter cooking spray. Be sure to spread dough completely to all sheet pan edges.

BAKE at 350 degrees for 20 minutes (after 12 minutes I take the toffee bars out of the oven and cover the edges with foil to prevent burnt edges, and then put them back in the oven for the remaining 8 minutes). Baked toffee bars should be lightly browned when pulled from the oven.

TOP hot-from-the-oven toffee bars with bars of chocolate (6 Hershey bars will easily cover the toffee bars with a nice layer of chocolate, but in this case I used only 4 and it was plenty of enough chocolate to cover). Let the chocolate bars sit for just a few minutes to allow them to SOFTEN to a spreadable form. SPREAD melted chocolate with a knife to cover the toffee bars.

Set aside and allow chocolate to SET. It helps to throw the bars in the refrigerator to assist and speed-up the setting process.

Once set, CUT the toffee bars into squares.

In my opinion, these bars are more a toffee shortbread consistency than a toffee-toffee. But they are super yummy and easy to make cookies that I recommend you give a try.

For fun with kids, you could even decorate the top with sprinkles and candies and things (before the warm chocolate sets of course).

UPDATE: The sheet pan I use for this recipe is approximately 10 1/2 x 15.
